This past weekend we had a failed camping attempt. We purchased a tent and gathered with all of our friends from church for the annual camp out. Noah loved running around and exploring- and amazingly he didn't even get one bug bite! That was pretty much the only success of the night...although Noah and I were pretty awesome square dancers.
After all the fun, it was time to settle in - but Noah wouldn't have it. After wrestling with him until about midnight - we decided to pack up the air mattress and tent and head for home. Luckily it was only about a 30 minute drive and Noah was asleep within 5 minutes. What can you do? We had a great time though and will try it again, maybe when he is a little older :)

Little Chef
Noah has caught the cooking bug...
Whenever he sees me doing anything at the counter, he insists on participating. The apron he wears is one of mine, and he loves it. Maybe I should make him one of his own...this pink one may be a little too girly. With that...I have two recipes to share this week. Both are super easy and super tasty.
First recipe is from one of our favorite shows - The Next Food Network Star. I wanted to try this since the moment I saw it, and I am glad it did. It's a simple version of a classic sandwich and the minor changes make all the difference. Just a hint of Indian flavor really hits the spot.
Bacon Lettuce and Cucumber Sandwich with Spicy Cumin-Mint Mayo

1 pound thick-sliced bacon
2 tablespoons ground cumin
1 tablespoon ground coriander
1 teaspoon minced fresh garlic
11/2 cups prepared mayonnaise
1 big handful fresh mint leaves
Kosher salt and freshly ground black pepper
8 slices country white bread
1 English cucumber, sliced 1/4-inch thick
1/2 head iceberg lettuce, sliced thin
In a large skillet, cook the bacon over medium-high heat until crispy. Transfer the bacon to paper towels to drain the excess oil. In a small, dry pan over medium heat, toast the cumin and coriander until fragrant, about 5 minutes. Toss the spices in a food processor or blender with the garlic, mayo and mint leaves. Process the mixture until smooth. Season the mixture with salt, and pepper, to taste.
Lightly toast the bread until just golden brown. Spread the flavored mayo on all of the bread slices. On half of the slices, place a few slices of cucumber, a small handful of lettuce and a few slices of cooked bacon over that. Top with other bread slices and enjoy!
Second recipe is for those of you who may have a little bit of a sweet tooth (we all have our moments don't we?). I found this recipe on a great blog called My Kitchen Cafe!
Vanilla Pudding Cinnamon Rolls with Cream Cheese Frosting

Rolls:
½ cup warm water
2 tablespoons active dry yeast
2 tablespoons sugar
3 ½ ounce package instant vanilla pudding
½ cup butter, melted
2 eggs
1 teaspoon salt
6+ cups flour
Filling:
1 cup butter, softened to room temperature
2 cups brown sugar
4 teaspoons cinnamon
Frosting:
8 ounces cream cheese
½ cup butter, softened to room temperature
1 teaspoon vanilla
3 cups confectioner’s sugar
2-3 tablespoons milk
In a small bowl combine water, yeast and sugar. Stir until dissolved. Set aside. In large bowl, take pudding mix and prepare according to package directions. Add butter, eggs and salt. Mix well. Then add yeast mixture. Blend. Gradually add flour; knead until smooth. Do not over flour the dough! It should be very soft but not sticky. Place in a greased bowl. Cover and let rise until doubled. Then roll out on floured board to 34 X 21 inches in size. Take 1 cup soft butter and spread over surface. In bowl, mix 2 cups brown sugar and 4 teaspoons cinnamon. Sprinkle over the top. Roll up very tightly. With knife put a notch every 1 1/2 inches. Cut with thread or serrated knife. Place on lightly greased cookie sheet 1 inch apart. Cover and let rise until double again. Bake at 350 degrees for 15-20 minutes. Remove when they start to turn golden (don’t over bake). Frost warm rolls with cream cheese frosting (combine butter and cream cheese and mix well, then add vanilla and sugar and mix again, then add milk for desired consistency). Makes about 24 very large rolls.

The Making of A Dodger Fan
Ok, so this weekend the Dodgers may not have played their finest - but we wouldn't be true fans if we didn't support the team, even in a slump.
So Andy's BFF Bobbo came to town and we all took a little trip to STL for the Dodgers vs. Cardinals game. We were definitely the minority among all the Cardinals fans...but we still had a good time!
Saturday's morning Bob and Andy went for a run around Downtown. Later, during the game..the weather was SO hot that Noah and I sat the whole game under the stadium by the concessions. Needless to say it's a good thing we did, Andy and Bob walked out DRENCHED in sweat. It was a warm one!

Story of A Storm Chaser
This is the story of Noah, the storm chaser....
Yesterday was a pretty typical Sunday for us. Church in the morning, family dinner, maybe a little nap and extra quality time spent as a family. Usually when we get home from church Noah is already asleep in the car, obviously exhausted. He will nap, and we usually take a little snooze ourselves! When we woke up from our nap it was obvious that there was a storm-a-brewin outside. The weather here has been pretty wet lately, so it came as no surprise. Andy loves to stand out under the porch during the rain...and yesterday the rain was especially bad. High winds, large puddling around our house and even a tornado warning! The tornado sirens started to sound, and I told Andy maybe he should take that as a sign, and come inside.
After a few minutes there came a knock at our front door. Our neighbor from across the street came by to let us know that our garage door was wide open. Whoops! Forgot to close it when we got home from church. I immediately walk into the kitchen, to the door that goes out into the garage....meanwhile Andy, thinking I am still standing behind him at the front door with Noah, walks outside and comes into the garage from the front of the house, leaving the door open. As he comes into the house through the garage I walk back into the living room. "Andy, where is Noah??" I ask, frantically. Realizing that the front door is still open I run outside (all during the pouring rain and tornado warning) to find our neighbor snatching up Noah just before he walks down the hill!!! I was obviously freaking out - but Noah thought it was funny-grinning and clapping the whole time. Needless to say Andy started calling him the storm chaser...and when I told my parents about the incident my dad replied, "Well, with the name Noah, it's no wonder he likes that kind of weather." ha. I guess so.
Life with a one year old is NEVER boring, I can tell you that much. There will be no storm chasing in Noah's future if I have anything to do with it!

Lions and Tigers and Bears, Oh My!
This past week my brother Mike and his wife Megan came to visit! Mike served his mission in Saint Louis and came back to show Megan around. They spent a few days with us, which was awesome, and also spent some time up in Saint Louis. It was so great having them here! I love having family come to visit!! Anyway, we took a day trip up to STL to go to the zoo and see the Arch. Can I just say, I LOVE the Saint Louis zoo! It was one of the best zoos I have been too, and the best part? Admission is FREE. Yes, free.
We had a great time. If you are ever visiting Saint Louis, I highly recommend going to the Zoo, we can't wait to go back!
Noah loved the carousel! Don't be alarmed by his sweet ride - it's a caterpillar, not a slug. ha.

Happy Fourth of July!!
I am a little ashamed that I don't have more pictures to share, but the honest truth is, this wasn't a typical 4th of July. It's especially apparent around holidays, how much we both wish we lived closer to family. While all of our family were partying it up out west...we did a few things of our own....and that was just fine with us!
We bought about eight dollars worth of Fireworks and had a little fun with Noah. He was obviously being supervised VERY closely...and I think he loved the sparklers the most.
Like his PJs? ha. We didn't go to any big events, or firework show. We just spent time as a family, which was wonderful - especially considering that just a year ago Andy had been gone for a mere 2 months. Time sure does fly. Remember this?
I know I have said it before, and I will say it again. I am grateful for that experience and feel like it has made our family stronger. I am especially grateful for the men and women who serve our country - not just because my husband is one of them...but because they are great...and grateful for the families who support them.
While most of you were probably BBQing...we were making this sweet treat....
Sweet Pork burrito with cilantro rice, green sauce and homemade guacamole. Probably the BEST burrito I have ever had - and I made it all myself. Well...I did have a recipe. Check out one of my favorite recipe sites HERE to find it. Trust me, you will NOT be disappointed! Tell me, have you made this too? Did you love it as much as we did??
Andy and I are avid watchers of food reality shows. Next Food Network Star, Top Chef ...you get the idea. Anyway, we have officially decided that we want to start making one new recipe a week...we may find these recipes from food blogs, our favorite food reality shows or from my food magazines. Regardless, it will be all about the food, and we will be sharing our favorites with you! So check back. In the mean time...make this pork burrito. You will love it!
And a happy INDEPENDENCE day to all of you.

Please Tell Me You Saw This...
Ok...it's another guilty pleasure moment. I love So You Think You Can Dance. I am not a dancer, nor would I ever claim to be...but I sure love to watch other people do it! Anyway this is probably the greatest routine I have ever seen on the show...I have it on my DVR and may or may not have already watched it 5 times.
